Separated lots from multiple small producers in the area.

From the mountainous coffee-growing region of La Plata, Huila, in southwestern Colombia, San Sebastián AA represents the combined craft of a community of smallholder farmers rather than a single estate. The area sits among the high slopes of the Colombian Andes, where rich volcanic soils, elevations of around 1,500–1,900 metres and cool nights help the coffee cherries mature slowly, developing sweetness and complexity. Huila is one of Colombia’s most celebrated coffee regions, known for coffees that balance lively fruit acidity with sweetness and body.

The name San Sebastián comes from the area's historic name, San Sebastián de La Plata, associated with the parish established there in 1651. La Plata itself takes its name from the Spanish word for silver, reflecting the area's colonial-era history of silver discoveries. Today, the name lives on in this community coffee, connecting its historic landscape with the work of modern farming families.

The coffee is produced by smallholders growing varieties including Caturra, Colombia and Castillo, then hand-picking ripe cherries and processing them using the washed method before sun-drying the beans. Through local producer networks, including OCCICAFE, and a long-standing relationship with exporter Caravela, individual deliveries are evaluated and selected lots are brought together to create a consistent community offering. This collaborative approach allows smaller farms to access specialty-coffee markets while celebrating the distinctive quality of their region.

In the cup, San Sebastián AA has significant complexity—a sweet, balanced profile that reflects the character of carefully selected washed coffees from Huila. More than a single farm's harvest, it is a shared expression of the area's landscape, farming knowledge and collective effort, bringing together the work of many growers in one distinctive Colombian coffee.
